Traditionally the chicken rice balls are eaten during special occasions, like Lunar New Year, Qing Ming, birthdays, and etc. In Hainan, chicken rice ball is known as "Fan Zhen", it represents family reunion. It is cook over a controlled fire, with chicken stock, ginger, pandan leaves, plus a secret family recipe. When the rice is hot, it is molded into a round ball (tennis-ball sized), which locks the flavor in. The rubbing requires some skills, it got to be fast, patient and heat-resisting.
In the old times, hawkers used to carry their food in baskets slung on a pole across their shoulder. It was too heavy to carry pots and bowls, so they shaped the rice into balls to make it easier to wrap in banana leaves and sell it to customers. Unfortunately this Hainanese food cultural art has changed. Today, most chicken rice stalls have replaced the rice ball into normal chicken rice (rice served with plate) as this is more convenient and less work involved.
I have learned the skill from my father-in-law. Until today, we still insist in serving riceballs as we wanted to pass down this traditional skill to the new generation. Otherwise it would be such a waste if this legacy is lost. You have to eat the rice ball with hands as it tastes better and brought back the old memories. Other than the riceballs, white and roasted chicken, we also served char siew, roasted pork and vegetables.

Chicken meat is fresh & tender… chilli sauce is spicy… rice is delicious… vege is tasty and the pig’s stomach is very well-cooked. Two thumbs up!!!
