何記面家起源自1945年,由来自中国大陆的何先生创立。第二次世界大战结束后,二十出头

的何先生来到了马来亚和其伯父开始学习制面的手艺。当初,都以手工的方式制面,利用面

粉和鸭蛋制成生面团,再用竹筒将面团磨平,最后将磨平了的面团切成一丝丝的面条。

 

在他的坚持与努力下,何先生掌握了这门精湛的手艺并开设了自己的面家。尝过了何記手工

面的食客都赞不绝口,因此在几年之后何先生的面家也开始渐渐扩张开来。随着何記面家的

声明远播,吸引了来自各地的食客,尤其是毗邻的新加坡食客,更是对何記面家情有独钟。

 

何先生于1999年逝世,虽然如此,他的手艺由其外甥承传了下来,所以直到今天您还可以在

新山各地找到何記面家的足迹之后。他的外甥陈先生开设了何明記面家,今天何記和何明記

面家都共同承传自同一门手艺,为大家带来富有口感和可口的手工面。

 

身为新的一代,我应该把何記手工面带来新加坡,和大家一同分享这门手艺,并让何記面家发扬光大。

 

Photo of Wanton NoodleHe Ji Noodle was originated in 1945. The founder of He Ji Noodle, Mr. Ho, was born in China. After the Second World War, in his early 20s, he came to Malayan and learned the art of noodle making from his great uncle. In the early days, noodle was made manually, flour and duck eggs were the only ingredients to make the dough, a huge bamboo was used to flatten the dough then followed by cutting the noodle into reasonable size.Photo of Chicken Claw Noodle

 

Through his perseverance, he managed to master the art of noodle making and opened his first wanton mee stall. Customers that had tasted his noodle were full of praises and as the years passed by, more stalls were opened up. People all over the world who have heard of He Ji would come to taste his wanton mee. Especially Singaporean, would ask for takeaway to bring back to Singapore for their friends and relatives.

 

Although Mr. Ho passed away in 1999, his art of noodle making was passed down to his nephew, and till today, you can still find He Ji in all parts of Johor Bahru. His nephew, Mr. Tan, has opened a new subsidiary, He Meng Ji, so the next time when you see He Ji or He Meng Ji, don't be too puzzle. They carry the same chewy and delicious wanton mee.

 

As the next new generation, I think I should bring in He Ji Noodle to share with my fellow Singaporean and not let such tasty wanton mee be found in Malaysia only!
